  • 2 cans 21 oz cherry pie filling Rich, ruby-red cherries that form the heart of this cake.
  • 1 box 15.25 oz yellow cake mix Provides a tender, comforting base.
  • 2 cups 7-Up lemon lime soda Adds unique lightness and moisture to the cake.

Preparation

  • Preheat your oven to 350 degrees. Spray a 9x13 inch baking dish with nonstick spray.
  • Add 1 1/2 cans of cherry pie filling to the bottom of the baking dish, spreading it evenly.
  • Sprinkle the entire box of yellow cake mix over the cherry pie filling without mixing it in.
  • Gently pour the 7-Up over the cake mix, avoiding mixing at this stage.
  • Gently swirl and incorporate the cake mix and 7-Up until it’s mostly covered, but still airy.
  • Dollop the remaining cherry pie filling on top for added flavor.

Baking

  • Place the dish on the middle rack and bake for about 60 minutes, or until the top is golden and a toothpick comes out clean.
  • Allow the cake to cool in the pan for at least 2 hours to achieve the right consistency.

Notes

Serve warm with vanilla ice cream or whipped cream. Avoid common mistakes like not using nonstick spray and not letting the cake cool completely.
