Dressing Ingredients

  • 1 tablespoon toasted sesame oil Rich, nutty flavor.
  • 2 teaspoons grated fresh ginger Adds warmth.

Instructions
 

Preparation

  • Prepare the dressing: In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, lime juice, and Sriracha (if using). Season with salt and pepper to taste. Set aside.
  • In a large serving bowl, combine the salad greens, shredded red cabbage, julienned carrot, sliced cucumber, mandarin orange segments, and dried cranberries.
  • Add the shredded cooked chicken on top of the mixed vegetables.
  • Drizzle the prepared sesame-ginger dressing over the salad ingredients.
  • Gently toss all the salad components together until evenly coated with the dressing.
  • Sprinkle roasted cashews or slivered almonds, toasted sesame seeds, sliced green onions, and fresh cilantro leaves (if using) over the assembled salad.
  • Serve immediately, or refrigerate for up to 2 hours before serving.

Notes

For best presentation, layer the ingredients instead of mixing them all together. Ensure freshness by storing dressing separately if meal prepping.
