Cooking

  • In a large skillet, cook the bacon over medium heat until crispy. Remove bacon and set aside, keeping bacon grease in the skillet.
  • Add the sliced sausage to the skillet and cook until browned, about 5-7 minutes.
  • Add the diced potatoes, bell pepper, and onion. Season with salt and pepper, and stir to combine.
  • Cook until the potatoes are tender and golden brown, about 15-20 minutes, stirring occasionally.
  • If using, create a space in the center of the skillet and crack the eggs into the space. Cook until the eggs are set to your liking.
  • Serve hot, garnished with chopped parsley.

Notes

To store leftovers, keep in an airtight container in the fridge for up to 3 days. Reheat before serving. For variations, consider using turkey bacon or adding more vegetables such as spinach or zucchini.
