  • 10 6-inch flour tortillas Soft and pliable, the perfect wrapper.
  • 10 oz can red enchilada sauce Tangy layer that brings the dish together, divided.
  • 1 cup shredded cheddar cheese Rich and melty, adding comfort.
  • 1 cup shredded Monterey Jack cheese Creamy and flavorful, complementing the cheddar.
  • to taste sliced black olives Adding a pop of flavor.
  • to taste chopped fresh cilantro Bringing brightness to the dish.
  • to taste sour cream To balance the spiciness.
  • to taste sliced green onions Perfect for a finishing touch.

Instructions
 

Preparation

  • Preheat your oven to 375 degrees Fahrenheit.
  • Lightly spray a 9x13 inch baking dish with cooking spray.
  • In a large skillet over medium heat, cook and crumble the ground beef until browned and fully cooked. Drain excess grease.
  • Add taco seasoning and water to the beef mixture, stirring to combine. Let it thicken for about 2-3 minutes.
  • Stir in the refried beans until fully combined and heated through. Remove from heat and set aside.

Assembly

  • Pour a thin layer of red enchilada sauce into the bottom of the prepared baking dish.
  • Lay a flour tortilla flat on a plate, spoon about 1/3 cup of the beef mixture down the center, sprinkle with cheeses, and roll tightly. Place seam-side down in the baking dish.
  • Repeat with remaining tortillas and filling, arranging them in a single layer in the dish.
  • Pour the remaining enchilada sauce evenly over the top, then sprinkle with remaining cheeses.
  • Bake in the preheated oven for 20 to 25 minutes, until cheese is melted and bubbly. Let cool for 5 minutes before serving.

Serving

  • Garnish with sliced black olives, fresh cilantro, sour cream, and green onions. Serve hot.

Notes

For a healthier version, you can use lean turkey or black beans instead. Ensure tortillas are warmed enough to stay pliable during assembly.
