Preparation

  • Begin by thinly slicing the beef sirloin into strips and placing them in a bowl.
  • Add soy sauce, oyster sauce, sesame oil, cornstarch, and black pepper to the beef. Mix thoroughly to ensure the beef is evenly coated, and let it marinate for at least 15 minutes.
  • While the beef marinates, cook the udon noodles according to the package instructions. Once done, drain them and set them aside.

Cooking

  • In a large pan or wok, heat vegetable oil over medium-high heat.
  • Add minced garlic to the pan and stir-fry for approximately 30 seconds or until fragrant.
  • Add the marinated beef to the pan in a single layer, allowing it to sear for 1-2 minutes before stirring.
  • Toss in the sliced red and green bell peppers along with the onion. Continue to stir-fry for an additional 2-3 minutes until the vegetables are slightly tender.
  • Pour in the beef broth, allowing it to come to a gentle simmer.
  • Add the cooked udon noodles to the pan and toss everything together to ensure the flavors meld well.
  • Cook for an additional 1-2 minutes until the noodles are heated through.
  • Sprinkle the chopped green onions on top before serving.
