French Toast

  • 8-10 slices thick brioche bread Day-old or pre-baked for softness and buttery richness.
  • 4 large eggs Acting as the binding agent.
  • 1 cup vanilla coffee creamer For dipping the bread and providing moisture.
  • Whipped cream For a delightful finishing touch.
  • Remaining blueberry sauce For topping.

Preparation

  • In a saucepan over medium-high heat, combine the fresh blueberries, water, vanilla extract, and granulated sugar. Stir occasionally while cooking.
  • Once it comes to a boil, reduce the heat, allowing it to simmer for about 5 minutes. Remove from heat and cool.
  • In a small bowl, blend the softened cream cheese with 1/4 cup of vanilla coffee creamer until smooth. Stir in the cooled blueberry sauce.
  • Prepare brioche slices by cutting a gentle slit in the top of each or spreading cream cheese mixture between pre-sliced pieces.
  • In a shallow bowl, whisk together eggs and 1 cup of vanilla coffee creamer.

Cooking

  • Preheat a skillet over medium-low heat and grease with butter or cooking spray.
  • Dip each stuffed bread slice into the egg mixture, allowing excess to drip off, then place in the skillet.
  • Cook until golden brown on both sides, taking care not to rush the process.

Serving

  • Serve warm, drizzled with remaining blueberry sauce and topped with a dollop of whipped cream.

Notes

Day-old brioche works best; don't rush cooking; experiment with filling ingredients.
