Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the cold cubed butter to the dry ingredients and cut it in until it resembles coarse crumbs.
  • In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
  • Pour the wet ingredients into the flour-butter mixture and stir gently until the dough comes together.
  • Fold in the fresh blueberries, being careful not to crush them.
  • Turn the dough out onto a lightly floured surface and pat it into an 8-inch circle, about 1-inch thick.
  • Cut the circle into 8 equal wedges and transfer them to the prepared baking sheet.

Baking

  • Bake in the preheated oven for 18-22 minutes, until golden brown and firm to the touch.
  • While cooling, prepare the glaze by mixing powdered sugar, milk, and vanilla extract until smooth.
  • Cool the scones slightly, then drizzle with glaze and serve.

Notes

Use cold butter to achieve flakier scones, and handle the dough gently to prevent toughness. Variations can include whole wheat flour or different mix-ins like lemon zest or chocolate chips.
