Preparation

  • Heat butter and olive oil together in a large skillet over medium-high heat.
  • Add chopped onion and cook until soft and translucent, about 3-4 minutes.
  • Add minced garlic and cook for one more minute, stirring to prevent burning.
  • Stir in orzo and toast for about a minute.
  • Pour in vegetable broth and heavy cream, seasoning with salt, pepper, and garlic powder; stir well.
  • Increase heat to medium-high and wait for the mixture to bubble gently.
  • Reduce heat to low and let orzo cook for about 5 minutes, stirring occasionally.
  • Add the broccoli florets, ensuring they're submerged, and cook for another 5 minutes.
  • Turn off the heat and stir in shredded cheddar cheese until melted.
  • Let dish sit for a couple of minutes before serving.

Notes

Serve warm as a main dish or side; pairs well with green salad or grilled meats. Store leftovers in airtight containers for about 3-4 days in the fridge. Can be frozen for up to 2 months.
