  • 2 cups beef broth Provides a rich sauce base.
  • 1/4 cup all-purpose flour Used to thicken the sauce.
  • 10 pieces flour tortillas Soft and warm, ideal for serving with the stew.

Instructions
 

Preparation

  • Preheat a large, heavy pot over medium-high heat.
  • Add vegetable oil to the pot and let it warm until it shimmers.
  • Add the stew beef to the pot and brown it on all sides, approximately 5-6 minutes.
  • Once browned, add the chopped onion, minced garlic, chopped bell pepper, and diced tomato to the pot.
  • Season with cumin, paprika, chili powder, salt, and black pepper. Stir to combine.
  • Pour in the beef broth and bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours until the beef is tender.
  • In a small bowl, mix the all-purpose flour with a bit of water to create a smooth slurry.
  • Slowly stir the slurry into the pot and continue to simmer for an additional 10-15 minutes until the sauce thickens.
  • While the stew finishes, heat the flour tortillas on a separate skillet or in the oven.
  • Serve the Carne Guisada hot with warm flour tortillas on the side.

Notes

Let the stew sit after cooking to allow the flavors to meld. For a gluten-free version, substitute flour with cornstarch.
