Instructions

Preparation

  • Cut the chicken into small bite-sized pieces.
  • Heat a large skillet over medium-high heat and add the butter.
  • Once melted, add the chicken to the pan and season it with salt, black pepper, cayenne, cumin, dried cilantro, and chili powder.
  • Stir occasionally until the chicken is cooked through and beautifully golden.

Cooking

  • Push the cooked chicken to the edges of the skillet, creating a space in the center. Add olive oil there.
  • Introduce the uncooked rinsed rice into the center of the skillet and stir for a couple of minutes to lightly toast it.
  • Pour in the Rotel, tomato sauce, minced garlic, and chicken broth, stirring everything together.
  • Cover the skillet with a lid and reduce heat to medium-low. Cook for approximately 15 to 20 minutes, or until the rice absorbs the liquid and becomes tender.
  • Drizzle or spoon the white queso cheese dip over the top, allowing it to melt. Sprinkle fresh chopped cilantro on top.

Serving

  • Serve the dish in warm flour tortillas or with crispy tortilla chips. Optionally, top with taco sauce or fresh Pico de Gallo before enjoying.

Notes

Be sure to rinse the rice to achieve fluffiness. Adjust spice levels to personal preference, and remember to stir occasionally during cooking to prevent sticking.
