Instructions
 

Preparation

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • Line a 12-cup muffin pan with cupcake liners; since this recipe makes 24 cupcakes, you'll need to bake in two batches.
  • In a large mixing bowl, combine the granulated sugar, all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture and beat on medium speed for about 2 minutes until smooth.
  • Carefully stir in the boiling water or hot coffee into the batter.
  • Pour the batter into the cupcake liners, filling each about two-thirds full.

Baking and Cooling

  • Bake the cupcakes for about 22 to 25 minutes.
  • Let them cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
