Preparation

  • Gather all the necessary ingredients: thick-cut bread, shredded coconut, all-purpose flour, ground cinnamon, salt, large eggs, milk, sugar, vanilla extract, butter, and maple syrup.
  • Slice the loaf of thick-cut bread into thick slices, about 1-inch in thickness.
  • In a shallow dish, combine the shredded coconut, all-purpose flour, ground cinnamon, and salt. Mix until evenly incorporated.
  • In a separate medium bowl, crack the eggs, then add the milk, sugar, and vanilla extract. Whisk until fully combined and smooth.
  • Heat a large skillet over medium heat. Add a tablespoon or two of butter and let it melt.

Cooking

  • Take a slice of bread and dip it into the egg mixture, coating both sides and letting excess drip off.
  • Press the dipped bread into the coconut mixture to ensure coconut sticks to both sides.
  • Place the coated bread slice onto the heated skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.
  • Transfer cooked French toast to a plate and repeat with remaining slices, adding more butter as needed.
