Ingredients
  

Egg Preparation

  • 12 pieces large eggs Fresh eggs provide a tender, creamy texture.

Filling

  • ½ cup mayonnaise Adds richness and a velvety mouthfeel.
  • 2 teaspoons pickle juice Add a tangy twist.
  • 2 teaspoons mustard Provides a zesty punch.
  • 4 tablespoons finely chopped dill pickles Adds crunch and savory flavor.
  • to taste salt and pepper Essential for seasoning.

Coloring Ingredients

  • 6 ounces water Used for different food dye colors.
  • 1 teaspoon white vinegar Helps color adhere to egg whites.

Instructions
 

Preparation

  • Place 12 eggs in a large saucepan and cover them with cold water. Bring the water to a boil.
  • Once boiling, turn off the heat and cover the pan. Let the eggs sit undisturbed for about 12 minutes.
  • Drain the hot water and rinse the eggs under cold water.
  • Peel the shells off each egg, keeping as much of the white intact as possible.

Coloring the Egg Whites

  • In separate cups, mix food coloring with water and vinegar. Stir to distribute color evenly.
  • Cut peeled eggs in half lengthwise. Remove the yolks and place in a bowl. Soak the egg whites in the colored water for at least 10 minutes.

Making the Filling

  • Mash the yolks in the bowl and incorporate mayonnaise, pickle juice, mustard, and chopped dill pickles. Season with salt and pepper.

Assembly

  • Remove soaked egg whites from dye and dry them on paper towels.
  • Fill the egg whites with the yolk mixture using a ziplock bag as a piping bag.
  • Arrange on a serving platter and refrigerate until ready to serve.

Notes

Avoid overboiling eggs; cool completely before peeling. Use natural dyes for a healthier option.
