Preparation

  • Preheat your oven to 375°F (190°C). Line two baking sheets with silicone baking mats or parchment paper.
  • In a mixing bowl, whisk together the cake flour, all-purpose flour, cornstarch, cinnamon, baking powder, baking soda, and salt. Set aside.
  • In a stand mixer, combine cream cheese, light brown sugar, cookie butter, softened butter, and granulated sugar. Mix on medium speed for 3 to 5 minutes until light and creamy.
  • Add in the egg, egg yolk, and vanilla extract. Mix until well combined.
  • Gradually incorporate the dry ingredients into the wet mixture, mixing on low speed until just combined.
  • Gently fold in the chocolate chips and crushed Biscoff cookies.
  • Divide dough into 14 to 16 portions. Place dough balls on prepared sheets.
  • Refrigerate the dough for about an hour.

Baking

  • Bake the cookies for 11 to 12 minutes until golden brown around the edges.
  • Use a biscuit cutter to even out the edges while still warm.
