  • 3/4 to 1 cup canola, vegetable, or avocado oil (for frying) Creating that desired crunch for the tortillas.
  • 15 oz can refried beans Creamy and rich, these beans serve as the perfect glue.
  • 10 oz can red enchilada sauce Adds a zesty and tangy kick.
  • 8 oz shredded cheddar cheese Nutty and melty, adding a rich layer of goodness.
  • 8 oz shredded pepper jack cheese A bit of kick that complements the cheddar.
  • 1 to 2 pieces tomatoes, chopped Offering a refreshing contrast.
  • 2 to 3 tablespoons sliced green onions Light and crisp, they bring a pop of color and flavor.

Instructions
 

Preparation

  • In a large skillet over medium heat, add the ground beef and diced onion (if using). Brown until fully cooked and drain excess grease.
  • Stir in taco seasoning and 1/4 cup water. Lower heat and simmer for 3 to 5 minutes until thickened. Remove from heat and set aside.
  • Heat oil in a separate skillet over medium-high heat. Fry each tortilla for about 30 seconds on each side until golden and crispy. Transfer to a paper towel-lined plate.
  • Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.

Assembly

  • Spread a generous layer of refried beans over one crispy tortilla, add seasoned beef mixture, and top with cheddar and pepper jack cheese.
  • Top with another crispy tortilla to create a sandwich.
  • Spread red enchilada sauce over the top tortilla and sprinkle more cheese.
  • Repeat to make a total of 6 pizzas and place them on the lined sheet pan.

Baking

  • Bake in preheated oven for 6 to 8 minutes until the cheese is melted and bubbly.
  • Remove from oven and top with chopped tomatoes and sliced green onions.
