Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish with a light coating of olive oil.
  • In a large mixing bowl, crack open the six eggs and beat them until fully combined.
  • Add the cottage cheese into the egg mixture and stir until evenly incorporated.
  • Pour in the milk, garlic powder, onion powder, salt, and black pepper, mixing everything together until smooth.
  • Stir in the shredded cheddar cheese and chopped bell pepper, ensuring even distribution.
  • Add the chopped green onions and mix gently without breaking them up too much.
  • Drizzle olive oil over the mixture and stir to combine.
  • Pour the entire mixture into the prepared baking dish and spread it out evenly.

Baking

  • Place the baking dish into the preheated oven and bake for 30-35 minutes.
  • Check for doneness by inserting a toothpick into the center; it should come out clean.
  • Once fully cooked, remove it from the oven and let it cool for a few minutes before slicing and serving.

Notes

Best if allowed to cool slightly before slicing. Use room temperature ingredients for a smoother blend.
