Preparation

  • Place a medium-sized mixing bowl on the countertop.
  • Crack two large eggs into the bowl.
  • Use a whisk or a fork to beat the eggs until they are fully combined and slightly frothy.
  • Add one cup of cottage cheese to the bowl with the beaten eggs and stir until well combined.
  • In a separate bowl, measure out half a cup of flour, then add a quarter teaspoon of salt, one tablespoon of sugar, and half a teaspoon of baking powder. Stir to combine.
  • Slowly add the dry ingredients to the wet ingredients and mix gently until just combined.
  • Pour a quarter cup of milk into the batter and stir until the mixture is smooth and slightly thick.

Cooking

  • Place a frying pan or griddle on the stove over medium heat and let it warm up.
  • Add one tablespoon of butter to the pan, melting it completely.
  • Spoon some of the batter onto the pan, using about two to three tablespoons per pancake.
  • Cook the pancakes for about two to three minutes, or until small bubbles form on the surface.
  • Carefully flip each pancake using a spatula and cook for another two to three minutes until golden brown.
  • Once cooked, transfer pancakes to a plate and continue with the remaining batter, adding more butter as needed.
