Preparation

  • In a large pot over medium heat, combine olive oil and butter until melted.
  • Add chopped onion and minced garlic, stirring gently for about 5 minutes until softened.
  • Sprinkle in the flour, stirring for about 2 minutes to create a roux that turns a light golden color.
  • Slowly whisk in the seafood broth, bringing to a gentle simmer while watching it thicken.
  • Reduce heat to low and stir in the heavy cream, dry sherry (if using), paprika, thyme, cayenne pepper, salt, and pepper. Simmer gently for 10 minutes.
  • Gently fold in lump crab meat and shrimp, allowing to simmer for 5 minutes until shrimp are pink and opaque.
  • Taste and adjust seasoning as necessary.
  • Ladle the bisque into bowls, garnishing with chopped fresh parsley.
