Preparation

  • Preheat a large skillet over medium heat and add olive oil, letting it heat until shimmering.
  • Season the chicken breasts generously with salt and pepper on both sides.
  • Sear the chicken breasts in the skillet until browned on both sides, about 6-7 minutes per side. Aim for a golden crust.
  • Once cooked, remove the chicken from the skillet and set aside on a plate.
  • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the chopped sun-dried tomatoes next and cook for another 2 minutes.
  • Pour in the chicken broth, heavy cream, oregano, and basil, stirring to combine.
  • Bring the mixture to a gentle simmer, seasoning with salt and pepper to taste.
  • Return the seared chicken breasts to the skillet and let them simmer in the sauce for about 10 minutes.
  • Sprinkle grated Parmesan over the chicken and sauce just before serving.
  • Simmer for another 2-3 minutes until the sauce thickens.
  • Garnish with fresh parsley before serving.
