Sandwich Buns

  • 4 sandwich buns (brioche, ciabatta, or Kaiser rolls) Soft and inviting.

Instructions
 

Preparation

  • Pound the chicken breasts to an even thickness of about 1/2 inch.
  • In a medium bowl, whisk together buttermilk and Dijon mustard. Submerge chicken in marinade, cover, and chill in the refrigerator for at least 30 minutes or up to 2 hours.
  • Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper.

Cooking

  • Remove chicken from marinade and allow excess to drip off. Dredge in flour, dip in eggs, then coat in breadcrumb mixture.
  • Heat about 1/2 inch of oil in a large skillet over medium-high heat to 350°F (175°C). Fry chicken for 4-5 minutes per side until golden-brown and cooked through. Drain on paper towels.

Assembly

  • Toast the sandwich buns lightly. Spread Caesar dressing on the bottom half of each bun.
  • Layer shredded romaine, sliced tomato, red onion, and fried chicken. Sprinkle with crushed croutons and extra Parmesan. Drizzle more Caesar dressing.
  • Close sandwiches with the top bun and serve immediately while hot and crunchy. Garnish with optional avocado or pickles.

Notes

For best results, use fresh ingredients and monitor oil temperature during frying to achieve a perfect crust. Leftovers can be stored in the refrigerator for up to 2 days.
