  • 3 pieces bell peppers, chopped into bite-sized pieces Any color
  • 1 medium yellow onion, diced For sweetness
  • 1 tablespoon olive oil For sautéing
  • 2 teaspoons Potatoes Slayer from Fire & Smoke Society Or your favorite veggie spice blend
  • 5-6 cloves garlic, minced For flavor
  • 1 pound ground beef Or any ground meat of your choice
  • 1 tablespoon tomato paste For umami flavor
  • 14.5 ounces can diced tomatoes Juicy and flavorful
  • 1 cup uncooked long grain white rice Jasmine rice works well
  • 1 tablespoon beef bouillon Or 2 cups beef broth
  • 2 cups water
  • 2 cups shredded cheese Half sharp cheddar, half pepper jack
  • Dried parsley For garnish
  • 1/2 teaspoon garlic and herb seasoning blend For flavor
  • 1/2 teaspoon Slap Ya Mama Cajun seasoning For a kick
  • 1/2 teaspoon Italian seasoning For herby undertones
  • 1/2 teaspoon black pepper For spice

Instructions
 

Preparation

  • In a large skillet, heat olive oil over medium-high heat. Add chopped bell peppers and diced onion. Sauté for about 10 minutes until the vegetables begin to soften.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Add ground beef and cook over medium heat until browned. Drain excess grease.
  • Sprinkle in all seasonings and mix well to coat beef and vegetables evenly.
  • Stir in tomato paste and cook for 2 minutes.
  • Add diced tomatoes, uncooked rice, beef bouillon (or broth), and water. Mix thoroughly.
  • Bring to a boil, then reduce heat to low, cover, and let simmer for 18 to 20 minutes, or until rice is cooked and liquid is absorbed.
  • Stir the mixture and evenly sprinkle cheese on top. Cover again to let the cheese melt for a few minutes.
  • Once cheese is melted, remove the lid and sprinkle with dried parsley if desired. Serve hot.

Notes

Use fresh vegetables for the best flavor. Adjust seasonings to taste. Stir occasionally to prevent sticking.
