For the crust

  • 1.5 cups 1 1/2 cups graham cracker crumbs Gives a sweet, crunchy base.

For the filling

  • 32 ounces 4 packages (8 ounces each) cream cheese, softened The heart of the cheesecake.
  • 1 cups 1 cup sugar Balances the cream cheese richness.
  • 4 large 4 large eggs Adds richness and structure.
  • 1 teaspoon 1 teaspoon vanilla extract Elevates flavor.
  • 1 cups 1 cup white chocolate, melted Creates a luxurious mouthfeel.
  • 1 cups 1 cup fresh raspberries Adds flavor and color.
  • 0.25 cups 1/4 cup raspberry jam Enhances raspberry flavor.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  • Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of the prepared pan.
  • Beat cream cheese until smooth. Gradually mix in sugar until creamy.
  • Add eggs one at a time, mixing well after each. Incorporate vanilla extract and melted white chocolate.
  • Pour half of the cheesecake batter over the crust.
  • In a saucepan over low heat, combine fresh raspberries and raspberry jam until melted and smooth.
  • Spoon dollops of raspberry mixture over the cheesecake batter and swirl with a knife.
  • Pour the remaining cheesecake batter on top and repeat the swirling process.

Baking

  • Bake in the preheated oven for about 60-70 minutes, until the center is set but slightly jiggly.
  • Let it cool at room temperature, then refrigerate for at least 4 hours before serving.

Notes

Use room temperature cream cheese for easy blending. Chill for at least 4 hours to meld flavors. Fresh raspberries yield the best taste.
