Preparation

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until it shimmers.
  • Add 1 pound of ground beef and cook until browned, breaking it up as it cooks.
  • Add 1 diced onion and 1 diced red bell pepper, cooking until softened (about 5 minutes).
  • Stir in 1 can of red enchilada sauce, 1 can of black beans, and 1 can of corn kernels, along with 1 teaspoon each of chili powder, cumin, salt, and pepper. Mix until well combined.
  • Reduce the heat to low and let the skillet simmer for about 10 minutes, stirring occasionally.
  • Sprinkle 1 cup of shredded cheddar cheese over the top, cover, and let it melt for 2-3 minutes.
  • Before serving, remove from heat and top with ½ cup of chopped fresh cilantro.

Notes

Taste as you go! Adjust spices according to preference. Don’t overcrowd the skillet to allow for even cooking. Garnish before serving for a fresh presentation.
