Ingredients
  

For the cheesecake

  • 1 cup whole milk Creamy and rich for a luscious flavor
  • 8 oz cream cheese Soft and tangy for that classic cheesecake taste
  • 1/3 cup granulated sugar Sweet and satisfying to balance the tanginess
  • 4 large eggs Room temperature for better emulsification
  • 1 tbsp all-purpose flour Light and airy to give structure
  • 1 tbsp cornstarch Helping to enhance the fluffiness
  • 1 tsp lemon juice Fresh and zesty for a hint of brightness
  • 1 pinch salt Enhances all flavors beautifully

Instructions
 

Preparation

  • Preheat your oven to 320°F (160°C).
  • In a medium saucepan, combine the cream cheese and whole milk over low heat. Stir continuously until smooth.
  • Remove from heat and allow to cool slightly. In a separate bowl, whisk the egg yolks with the granulated sugar until pale and fluffy, about 2-3 minutes.
  • Gently fold the cooled cream cheese mixture into the egg yolk mixture and add in the lemon juice, flour, cornstarch, and salt.
  • Whisk the egg whites until stiff peaks form, then gently fold the egg whites into the cream cheese mixture in three additions.
  • Prepare a 9-inch round cake pan by lining the bottom with parchment paper and greasing the sides. Pour in the cheesecake batter.
  • Place the cake pan in a larger baking dish and fill the outer dish with hot water halfway up the sides of the cake pan.

Baking

  • Bake in the preheated oven for about 40-50 minutes, or until the top is golden and a toothpick inserted comes out clean.
  • Turn off the oven and crack open the door, allowing to cool for about an hour.
  • Remove the cheesecake from the oven and let cool completely before refrigerating for at least 4 hours or overnight.
  • When ready to serve, remove from the pan, peel off the parchment, and slice into wedges.

Notes

Serve chilled, garnish with fresh berries, honey, or whipped cream. Common mistakes include using cold ingredients or overbaking.
