Preparation

  • In a medium saucepan, combine the granulated sugar and water over medium heat. Stir occasionally until the sugar is dissolved and the mixture reaches 238°F.
  • While the sugar syrup is heating, beat the egg yolks on high speed in a stand mixer until they become thick and pale.

Mixing

  • Once the sugar syrup reaches 238°F, slowly pour it into the whipped egg yolks on low speed.
  • Continue to beat on high speed until the mixture feels cool to the touch.

Creaming

  • Gradually add the softened butter, mixing well between each addition until fully incorporated and velvety.
  • Mix in the vanilla extract until well combined.

Storage

  • Transfer the buttercream to a piping bag or an airtight container for storage.

Notes

Use room temperature butter for smoother mixing. Monitor the sugar syrup closely and ensure your mixing bowl is clean and dry.
