Instructions
 

Preparation

  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and spices (ginger, cinnamon, cloves, nutmeg).
  • In a stand mixer, cream the butter and brown sugar until light and fluffy.
  • Add molasses, egg yolk, and vanilla extract to the butter-sugar mixture and mix until well combined.
  • Gradually add the dry ingredients to the wet mixture on low speed until fully incorporated without over-mixing.
  • Shape the dough into a disk, wrap it in plastic wrap, and chill in the refrigerator for at least two hours.
  • Preheat your oven to 350°F (175°C).

Baking

  • Roll out the chilled dough on a floured surface to about ¼ inch thick.
  • Use cookie cutters to cut shapes from the dough and place them on parchment-lined baking sheets.
  • Bake the cookies for 7–9 minutes or until they are just set, with firm edges and soft centers.
  • Allow the cookies to cool before decorating.

Notes

For best results, ensure butter is at room temperature before starting. Chilling the dough is crucial to prevent excessive spreading. Consider using fresh spices for the best flavor.
