  • 1 tbsp olive oil Adds sheen and rich taste.

Toppings

  • ½ cup BBQ sauce Divided for flavor enhancement.
  • cups Colby Jack cheese Hand-shredded for melting.
  • 1 cup rotisserie chicken Shredded or cubed for convenience.
  • ¼ cup red onion Thinly sliced for added crunch.
  • ¼ cup fresh pineapple Diced small for tropical sweetness.
  • 1 tbsp garlic powder For added aromatic flavor.
  • to taste salt and pepper Essential for flavor balance.
  • 2 tbsp green onion Chopped for garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Brush the olive oil over the top of the flatbread.
  • Bake the flatbread in the center of the oven for 5 minutes to ensure a crispy base.
  • Remove the flatbread and spread a quarter cup of BBQ sauce evenly on top.
  • Sprinkle 1 cup of shredded Colby Jack cheese over the BBQ sauce.
  • In a bowl, toss the shredded rotisserie chicken with garlic powder, salt, and pepper.
  • Spread the seasoned chicken over the cheese layer.
  • Sprinkle the remaining cheese on top of the chicken.
  • Scatter the thinly sliced red onion over the toppings.
  • Distribute the pineapple chunks evenly across the flatbread.
  • Drizzle the remaining BBQ sauce over the entire flatbread.
  • Return the flatbread to the oven and bake for an additional 10 to 15 minutes, monitoring until cheese melts.
  • Once done, sprinkle chopped green onions on top before slicing.
  • Serve hot and enjoy!

Notes

For a healthier twist, try using whole wheat flatbread or grilled chicken. Store leftovers in an airtight container for up to 2-3 days.
