  • Peel and grate the small onion, then add it to the bowl with the potatoes.
  • In another bowl, whisk together the eggs, all-purpose flour, salt, and black pepper until smooth.
  • Incorporate the squeezed potatoes and onion into the egg mixture, stirring until well combined.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat until it shimmers.
  • Scoop about 1/4 cup of the potato mixture onto the hot skillet and flatten gently into pancake shape.
  • Fry for about 4-5 minutes on each side until golden brown and crispy.
  • Transfer the cooked potato pancakes to a paper towel-lined plate to absorb excess oil.
  • Serve hot with your favorite toppings such as sour cream, applesauce, or fresh herbs.

Notes
