For the Topping

  • 8 ounces ricotta cheese Creamy and rich, perfect for dolloping on top.
  • 1/2 cup grated Parmesan cheese Adds a nutty and salty punch.

Cooking

  • Heat a large pot over medium heat and add the sweet Italian sausage. Begin breaking it up into smaller pieces as it cooks.
  • Once browned, add the chopped onions and cook until they soften, about 5 minutes.
  • Introduce the minced garlic, dried oregano, and crushed red pepper flakes, then cook for 1 minute until fragrant.
  • Incorporate the tomato paste and let it cook for an additional 2 minutes, stirring to avoid burning.
  • Pour in the fire-roasted diced tomatoes along with their juices, toss in the bay leaves, and stir in the chicken stock. Bring to a gentle boil.
  • Reduce the heat and let the soup simmer for 30 minutes.
  • Add the mafalda or fusilli pasta and cook according to package instructions until al dente.
  • Stir in the finely chopped basil and season with salt and pepper to taste.
  • In a small bowl, prepare the creamy topping by combining ricotta cheese, grated Parmesan cheese, and 1/4 teaspoon of salt.
  • Ladle the warm soup into bowls, topping each with a dollop of the creamy cheese mixture and sprinkle shredded mozzarella cheese on top.
