Fruit Mixture

Trifle Layers

  • 1 pound cake, cut into cubes Soft and tender
  • 1/2 cup lemon curd Creamy and tangy
  • 1/2 cup mascarpone cheese Rich texture

Instructions
 

Preparation

  • In a large mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract.
  • Using an electric mixer, beat the mixture on medium-high speed until soft peaks form.
  • Set aside the whipped cream.
  • In another bowl, combine blueberries, lemon zest, and lemon juice. Stir gently until well mixed and set aside.
  • Cut the pound cake into uniform bite-sized cubes.
  • In a separate bowl, whisk together lemon curd and mascarpone cheese until smooth.

Assembly

  • Begin layering by placing a layer of pound cake cubes in a trifle dish.
  • Spoon some mascarpone-lemon curd mixture over the cake layer.
  • Add a layer of the blueberry mixture over the mascarpone layer.
  • Top with a generous layer of whipped cream, smoothing it out.
  • Repeat the layering process until all ingredients are used, finishing with a layer of whipped cream.
  • Garnish with whole fresh blueberries and a sprinkle of lemon zest.
  • Cover and refrigerate for at least 4 hours or overnight.

Notes

Allow the trifle to chill to meld flavors. Optional variations include using different fruits or adjusting sweeteners for a lighter version.
