Preparation
Sprinkle gelatin over water in a small bowl and let it bloom for about 5 minutes.
In a medium saucepan over low heat, combine egg yolks and sugar, whisk until smooth.
Add lemon juice and lemon zest, whisk continuously to combine.
Gradually heat the mixture while whisking until thickened, reaching about 170°F (77°C). Do not boil.
Remove from heat and set aside to cool.
Heat the bloomed gelatin in the microwave for 10-15 seconds until dissolved, then stir into the lemon mixture.
Allow the lemon mixture to cool to room temperature for about 10 minutes.
In a large mixing bowl, beat the heavy cream until stiff peaks form.
Gently fold the cooled lemon mixture into the whipped cream using a spatula.
Transfer the mousse into serving glasses or bowls and refrigerate for at least 2 hours to set.
Notes
Serve chilled, garnished with mint leaves or fresh berries for added flair. Ensure to use fresh lemons for optimal flavor and texture.
