For the Taco Filling

  • 1 lb ground beef Cook until browned.
  • 1 packet taco seasoning For the distinctive Mexican flavor.
  • 1/3 cup water To simmer with the taco seasoning.
  • 1 15 oz can black beans Drained and rinsed.
  • 1 cup corn kernels Fresh or frozen.

For Assembly

  • 1 cup salsa For topping.
  • 1 cup shredded cheddar cheese For richness and creaminess.
  • 1/4 cup chopped green onions For garnish.
  • 1/4 cup chopped fresh cilantro Optional for a fresh flavor.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, toss diced potatoes with olive oil, chili powder, cumin, salt, and pepper until well coated.
  • Spread seasoned potatoes evenly on a baking sheet.

Cooking Potatoes

  • Bake potatoes in the preheated oven for 25-30 minutes, stirring halfway through until they are golden and tender.

Cooking Beef

  • While the potatoes are roasting, heat a large skillet over medium-high heat.
  • Add ground beef and cook until browned, about 5-7 minutes.
  • Drain excess fat.
  • Stir in taco seasoning and 1/3 cup of water, simmer for 2-3 minutes until thickened.
  • Add black beans and corn, heating until warmed through.

Assembly

  • Divide roasted potatoes among meal prep containers.
  • Top each portion with the beef and bean mixture, salsa, and cheddar cheese.
  • Garnish with green onions and cilantro if using.
  • Let cool before sealing containers.

Notes
