Preparation

  • Preheat your oven to 350°F (175°C). Place a large rimmed baking sheet filled halfway with water on the bottom rack.
  • Line a 12-cup muffin tin with metal cupcake liners.
  • In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until combined and press evenly into the cupcake liners.

Making the filling

  • In a separate bowl, beat cream cheese and brown sugar until creamy.
  • Add sour cream and flour, mixing until just incorporated. Introduce eggs one at a time, mixing gently after each addition.
  • Spoon cheesecake batter into the lined muffin cups, filling them generously.

Baking

  • Place the muffin tin above the pan of water and bake for 25 minutes.
  • Once baked, let the cheesecakes cool for 15 minutes before transferring to a wire rack. Cool for 1 hour, then refrigerate for at least 4 hours.

Making the caramel topping

  • Melt caramel squares with 2 tablespoons of heavy cream in a saucepan over low heat. Stir in chopped pecans and cool for 5 minutes.
  • Spoon the caramel pecan mixture onto the cooled cheesecakes.

Whipping cream

  • Chill a metal bowl and whisk. Pour in 1 cup of heavy cream, powdered sugar, and 1 tablespoon of caramel syrup. Beat until stiff peaks form.
  • Pipe whipped cream onto each cheesecake and drizzle with caramel and chocolate syrups. Garnish with pecan halves.

  • Let the cheesecakes sit at room temperature for 10-15 minutes before serving.
