  • 1.25 cups all-purpose flour
  • 1.25 cups rolled oats
  • 0.5 teaspoons salt
  • 1 teaspoon baking soda
  • 0.5 cups granulated sugar
  • 0.5 cups packed light brown sugar
  • 0.75 cups melted unsalted butter Can be melted in the microwave
  • 1 teaspoon vanilla extract Add warmth to the crust

Filling ingredients

  • 14 oz sweetened condensed milk
  • 1 tablespoon lemon zest For aromatic brightness
  • 0.33 cups lemon juice Juice of about 2 1/2 large lemons
  • 2 large egg yolks
  • 0.5 teaspoons vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the flour, rolled oats, salt, baking soda, granulated sugar, and brown sugar. Stir until well mixed.
  • Drizzle in the melted butter and vanilla extract. Mix until the texture is crumbly.

Assemble the Bars

  • Press half of the oat mixture into the bottom of a greased 9x13-inch baking dish.
  • In another bowl, whisk together the sweetened condensed milk, lemon zest, lemon juice, egg yolks, and remaining vanilla extract until smooth.
  • Pour the filling over the crust, spreading it evenly.
  • Sprinkle the remaining oat mixture over the top to create a crumbly layer.

Baking

  • Bake in the preheated oven for about 40 minutes, or until the top is golden brown.
  • Allow the bars to cool completely in the dish before slicing.

Notes

For cleaner cuts, allow the bars to cool completely. Line the baking dish with parchment paper for easy removal.
