Ingredients
  

For the Pudding

  • 4 cups whole milk rich and creamy
  • 4 large egg yolks smooth and golden
  • 1/4 cup cornstarch a thickening agent
  • 2 teaspoons vanilla extract aromatic and sweet
  • 1/2 cup white sugar which balances the flavors

For Assembly

  • 15 oz vanilla wafer cookies crispy and delightful
  • 3 medium ripe bananas sliced into tender rounds (plus 1 more for topping)
  • to taste crushed vanilla wafers for a decorative topping

Instructions
 

Preparation

  • Combine the whole milk, egg yolks, cornstarch, vanilla extract, and sugar in a large skillet over low heat.
  • Whisk thoroughly until smooth to create a fantastic base.
  • Stir occasionally as the mixture cooks to prevent sticking, and in about 15 minutes, it should thicken and reach a light simmer.
  • Once thickened, remove from heat and let it cool slightly.

Assembly

  • Layer the bottom of a 7x11 inch dish with vanilla wafer cookies.
  • Arrange two sliced bananas over the cookies.
  • Pour the warm pudding evenly over the bananas and wafers.
  • Sprinkle another layer of vanilla wafers on top, cover the dish, and refrigerate for at least 4 to 6 hours or overnight.
  • Before serving, slice one additional banana for topping and sprinkle crushed vanilla wafers for extra crunch.

Notes

For best flavor and texture, chill overnight. Use ripe but firm bananas and stir continuously to avoid boiling.
