  • 1 packet (2 1/4 teaspoons) unflavored gelatin The magic ingredient that gives Panna Cotta its signature firmness.
  • a pinch salt Just a dash to enhance sweetness and round out the flavors.

For Serving

  • to taste berry compote Consider using fresh raspberries or strawberries combined with sugar and lemon juice.

Preparation

  • Bloom the gelatin by sprinkling it over 3 tablespoons of cold water in a small bowl and let it stand for about 5-10 minutes until it swells.
  • In a saucepan, combine the heavy cream, whole milk, sugar, and a pinch of salt. Heat over medium heat, stirring gently until the sugar dissolves and the mixture is hot, but not boiling.
  • Remove the saucepan from heat and add the bloomed gelatin, stirring until completely dissolved. Stir in the pure vanilla extract.
  • Pour the mixture into serving glasses or molds. Allow to cool to room temperature before covering with plastic wrap.
  • Chill in the refrigerator for a minimum of 4 hours, or overnight if time allows, until set.

Serving

  • To serve, unmold the Panna Cotta by dipping the molds in warm water for a few seconds to loosen. Invert onto plates and drizzle with your favorite berry compote or fresh fruits.

Notes

Make sure the cream mixture cools sufficiently before adding the gelatin to avoid graininess. Also, allow enough chilling time for a properly set dessert. For a healthier version, consider using half-and-half and a natural sweetener.
