For the Chicken

  • 4 pieces boneless, skinless chicken breasts juicy and tender
  • 1 cup grated Parmesan cheese delivering a rich and nutty flavor

For the Vegetables

  • 1 pound baby potatoes soft and creamy in the center
  • 2 cups broccoli florets fresh and vibrant
  • 1 tablespoon additional olive oil for the vegetables

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Place the baby potatoes on one half of a large sheet pan and drizzle with 1 tablespoon of olive oil. Season them with salt and pepper to taste before tossing to coat evenly.
  • Bake the potatoes in the preheated oven for about 15 minutes.
  • Meanwhile, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried oregano, dried basil, salt, and black pepper in a shallow dish.
  • Coat each chicken breast in the Parmesan mixture, ensuring it adheres well.
  • Place the coated chicken breasts on the other half of the sheet pan.
  • Drizzle the chicken with 2 tablespoons of olive oil.
  • After the initial baking time, take the sheet pan out of the oven and add the broccoli florets. Drizzle with the remaining olive oil and season with salt and pepper.
  • Return the sheet pan to the oven and bake for an additional 20-25 minutes, checking that the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.
  • Remove the sheet pan from the oven and let it rest for a few minutes before serving.
  • Serve the dish and enjoy!
