Instructions
 

Cooking Caramelized Pineapple

  • Melt 3 tablespoons of butter in a large non-stick skillet over medium heat. Add the brown sugar and stir until dissolved and bubbling, about one minute.
  • Gently place the pineapple rings into the sugar mixture, adding a maraschino cherry in the center of each. Cook for about two minutes until caramelized. Remove them with a slotted spoon and set aside, keeping the caramel sauce in the skillet.

Preparing the Batter

  • In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, combine the buttermilk, egg, and melted butter until well blended.
  • Slowly pour the wet ingredients into the dry ingredients, stirring just until combined. Avoid overmixing; a few lumps are fine.

Cooking the Pancakes

  • Return the skillet with caramel sauce to medium heat and place the caramelized pineapple rings back into the skillet with cherries in place.
  • Pour about 1/4 cup of pancake batter over each pineapple ring, ensuring full coverage.
  • Cook for 2-3 minutes until bubbles form on the surface and edges set. Flip and cook for another 1-2 minutes until golden brown.
  • Transfer pancakes to a plate, flipping upside down to show the pineapple and cherries. Drizzle with remaining caramel sauce and serve warm.
