Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, blend the cream cheese, powdered sugar, and vanilla extract until smooth.
  • Lay out the phyllo pastry and cut it into 3x3 inch squares.
  • Place a small dollop of the cream cheese mixture in the center of each square.
  • Top with a raspberry and press it gently into the cream cheese mixture.
  • Fold the corners of the pastry over the filling and seal.
  • Brush the seams with some beaten egg to help it adhere.
  • Place on a baking sheet lined with parchment paper.
  • Bake for 15-20 minutes or until golden brown.
  • Allow to cool and garnish with mint leaves if desired before serving.

Notes

Keep phyllo pastry covered with a damp towel while working to prevent it from drying out. Ensure phyllo squares are sealed with egg wash to maintain filling inside during baking.
