Preparation

  • Preheat the oven to 325°F (160°C).
  • In a bowl, combine the crushed chocolate cookies and melted butter, mixing until well combined. Press the mixture into the bottom of a 9-inch springform pan.

Mixing

  • In a large mixing bowl, beat the cream cheese along with the sugar until smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Add sour cream and mix until well incorporated. Gently fold in the whipped cream.

Baking

  • Pour the cheesecake mixture over the prepared crust in the springform pan, spreading it evenly.
  • Bake for 50-60 minutes or until the center is set but slightly jiggly.
  • Turn off the oven and leave the cheesecake inside to cool for 1 hour.
  • After 1 hour, let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

Serving

  • Before serving, top with morello cherries, drizzle with cherry liqueur if desired, and sprinkle with chocolate shavings.

Notes

Ensure cream cheese is at room temperature to avoid lumps. Don’t rush the cooling process; let it cool in the oven to prevent cracks. Chill overnight for a smoother finish.
