  • 1 leaf bay leaf Adds subtle depth to flavor.
  • 2 cups egg noodles Tender and perfect for soup.

Instructions
 

Preparation

  • Start by removing the meat from the rotisserie chicken and shredding or chopping it into bite-sized pieces.
  • In a large pot, bring the chicken broth to a simmer over medium heat.

Cooking

  • Add the sliced carrots, celery, chopped onion, minced garlic, dried thyme, dried parsley, bay leaf, and shredded chicken to the pot. Stir to combine.
  • Let the soup simmer for about 20 minutes, or until the vegetables are tender.
  • Add the egg noodles and continue to simmer for an additional 10 minutes, or until the noodles are tender.
  • Season with salt and pepper to taste, adjusting until the flavor is perfect.
  • Remove the bay leaf before serving.
  • Ladle the soup into bowls and enjoy.

Notes

Serve with crusty bread or garlic knots. Best enjoyed warm.
