Preparation

  • Preheat your oven to 350°F.
  • Heat olive oil in a skillet over medium heat. Sauté onions until fragrant, about 2 minutes.
  • Add red bell pepper and sausage; cook for about 5 minutes until browned.
  • In a bowl, whisk together eggs, heavy cream, cheddar cheese, salt, thyme, cayenne, and black pepper until fluffy.
  • Stir in chopped spinach until it wilts, about 1 minute.
  • Pour the egg mixture over the sausage and vegetables in the skillet and gently stir once.
  • Cook on the stovetop until edges turn yellow.

Baking

  • Transfer skillet to the oven and bake for 7-10 minutes until the center is slightly jiggly and the top is golden.
  • Allow frittata to sit for 5 minutes before slicing.
