For the Rollups

  • 5 large large eggs Rich and buttery, providing a creamy base.
  • 1 can (8 ounces) Pillsbury refrigerated crescent dinner rolls Flaky and tender rolls for wrapping.
  • 8 links breakfast sausage Juicy and hearty.
  • 4 slices cheddar cheese Sharp and melty.
  • Salt and pepper To taste, essential for flavor.

Preparation

  • Crack the eggs into a bowl, season with salt and pepper, and whisk until smooth and airy.
  • Heat a large skillet over medium heat and cook the breakfast sausage links until browned and fully cooked, about 8-10 minutes. Remove from the skillet.
  • In the same skillet, pour the beaten eggs, reduce to medium-low heat, and cook gently, stirring occasionally until just set and creamy.
  • Preheat the oven to 375°F and prepare a baking sheet lined with parchment paper.
  • Unroll the crescent dough and separate into eight triangles. Place half a slice of cheddar cheese, a spoonful of scrambled eggs, and a sausage link on the wide end of each triangle.
  • Roll each triangle from the wide end towards the point, sealing the seams. Place seam-side down on the baking sheet.
  • Bake in the preheated oven for 11-14 minutes until golden brown and cooked through.
  • Allow to cool for 2-3 minutes before serving.

Notes

These rollups can be served alone or with sides like fruit salad or hash browns. They are also great for meal prep and can be frozen before baking.
