Preparation

  • Preheat a large 12-inch skillet over medium heat, adding olive oil until it flows easily but does not sizzle or smoke.
  • Cook the shrimp by adding them to the hot skillet, seasoning with chili powder and salt. Cook for 3 to 4 minutes, flipping until they turn pink and opaque. Remove and set aside.
  • In the same skillet, melt the butter and sauté the chopped onion with a light sprinkle of salt for about 3 minutes until translucent.
  • Add minced garlic and cook for another 2 minutes, taking care not to burn it.
  • Stir in 1 cup of corn and smoked paprika, mixing until combined.
  • Pour in half-and-half, bringing it to a gentle simmer. Add 3 ounces of feta and stir until melted.
  • Squeeze in juice from half a lime and return the shrimp to the skillet, gently reheating everything together.
  • Serve topped with remaining corn, sliced limes, and chopped cilantro, adding extra chili or paprika if desired.

Notes

Ensure shrimp are patted dry before seasoning, and avoid overcrowding the pan. For variations, use coconut milk for a dairy-free version or swap shrimp for chicken.
