Instructions
 

Cook the Shrimp

  • Heat olive oil or butter in a skillet over medium heat.
  • Add the shrimp, garlic, paprika, salt, and pepper.
  • Cook for 2-3 minutes per side until shrimp turns pink and opaque.
  • Squeeze lemon juice over shrimp and stir before removing from heat.
  • Chop the shrimp into bite-sized pieces and set aside.

Make the Garlic Butter

  • In a small bowl, combine softened butter, minced garlic, parsley, and a pinch of salt.
  • Spread garlic butter on one side of each bread slice.

Assemble the Sandwich

  • Lay two slices of garlic-buttered bread butter-side down.
  • Layer shredded Monterey Jack cheese on the bread.
  • Sprinkle chopped shrimp over the cheese, then add more cheese on top.
  • Top with remaining slices of bread, buttered sides facing out.

Grill the Sandwiches

  • Heat a skillet or grill pan over medium-low heat.
