  • 12 pieces cooked shrimp Tender and succulent, preferably seasoned.
  • 3-4 tbsp sweet chili sauce Adds sweetness and a touch of heat.

For the Mango Salsa

  • 1 unit fresh mango Diced into small pieces.
  • 1 unit red onion Finely chopped for texture.
  • 1 unit red chili Adjust based on spice preference.
  • 1 unit lime Juice adds brightness.
  • to taste salt and black pepper Essential seasonings.
  • to drizzle extra virgin olive oil Enhances flavor.
  • to taste fresh coriander/cilantro Adds a fresh note.

Preparation

  • Marinate the cooked shrimp in sweet chili sauce and set them aside.
  • Prepare the mango salsa by combining diced mango, finely chopped onion, and red chili in a bowl.
  • Squeeze in the juice of one lime, drizzle with olive oil, and season with salt and black pepper.

Assembly

  • Scoop some avocado flesh from each avocado half and mix it into your salsa for extra creaminess.
  • Season the avocado shells lightly with salt and pepper.
  • Fill each avocado shell with the salsa mixture, ensuring it’s heaping and colorful.
  • Place the marinated shrimp on top of the salsa-filled avocados and serve immediately.

Notes

Serve with tortilla chips or a light salad. Avoid using overly ripe avocados and remember to season the salsa well for the best flavor.
