  • 1/3 cup brown sugar Provides caramelization.
  • 1 stick (1/2 cup) unsalted butter, sliced Enhances richness.
  • 8 oz cream cheese, softened Creates a perfect dip for the sliders.
  • 1/2 cup sour cream Adds creaminess.
  • 2 jalapeños, finely diced (seeds removed for mild) Customize the heat level.
  • 1 medium onion, caramelized Elevates the flavor of the spread.
  • 1 teaspoon garlic paste (or 2 cloves minced) Adds aromatic depth.
  • to taste salt Essential for flavor.
  • 12 to 15 slider rolls (Hawaiian or brioche recommended) Soft and sweet buns.
  • 12 to 16 slices pepper jack cheese Offers mild heat.
  • Crispy fried onions Adds crunch.

Instructions
 

Preparation

  • Pat the cubed chuck roast dry with paper towels.
  • Coat the meat evenly with BBQ rub and let it rest for about 30 minutes.
  • Preheat your smoker to 275°F. Use hickory, oak, or pecan wood.

Smoking

  • Place the cubed chuck roast on the grates and smoke for 2 to 3 hours.
  • Transfer the beef to a foil pan, pour in Dr Pepper, BBQ sauce, brown sugar, and sliced butter.
  • Cover the pan with aluminum foil and return to the smoker at 325°F for 1.5 to 2 hours.

Shredding and Mixing

  • Let the beef rest for 15 minutes after cooking, then shred in the pan.
  • In a bowl, mix cream cheese, sour cream, jalapeños, caramelized onions, garlic paste, and salt until smooth.
  • Refrigerate the mixture for 15-20 minutes.

Assembly

  • Preheat the oven to 375°F.
  • Slice the slider rolls in half horizontally, keeping them connected.
  • Spread jalapeño cream cheese on the bottom half, then layer cheese, shredded beef, more cheese, and fried onions.
  • Add the top half of the buns, brush with melted butter or BBQ sauce if desired.
  • Bake in a 9x13 inch dish covered loosely with foil for 15 minutes, then remove the foil and bake for another 5-8 minutes.

Serving

  • Allow the sliders to cool for a few minutes before separating them into individual pieces.

Notes

Patting the meat dry is key for crust. Allow beef to rest for even cooking and moistness.
