For the Biscuits

For the Sausage

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  • Cut in the cold butter until the mixture resembles coarse crumbs with pea-sized pieces of butter.
  • Stir in the cold buttermilk until the dough just comes together; do not overmix.
  • Turn the dough onto a floured surface and fold it a few times to bring it all together.
  • Roll the dough to about 1-inch thickness and cut out rounds with a biscuit cutter.
  • Place the biscuits on a baking sheet lined with parchment paper.

Cooking

  • Bake for 12-15 minutes, until golden brown.
  • Meanwhile, shape the breakfast sausage into patties and cook in a skillet over medium heat for 3-4 minutes per side until browned.
  • Drain sausage patties on paper towels.

Assembly

  • Split each biscuit in half horizontally and place a sausage patty inside each one.
  • Add cheese if desired and top with the other biscuit half.
  • Serve immediately while hot.
