For the Cobbler Base

  • 1/2 cup butter, melted Make sure the butter is fully melted but not browned.
  • 1/2 cup brown sugar Adds caramel-like sweetness.
  • 1/2 cup white sugar Balances the brown sugar.
  • 1 cup self-rising flour Key for fluffy texture.
  • 1 cup whole milk Adds creaminess.
  • 1/2 teaspoon vanilla extract Imbues the dish with aromatic notes.

For the Filling

  • 2 cans (16 oz) sliced peaches One can drained, one with juice.

For Serving

  • to taste ground cinnamon For topping.
  • to taste vanilla ice cream Perfectly complements the warm cobbler.

Instructions
 

Preparation

  • Preheat your oven to 350 degrees F.
  • Pour melted butter into a 7x11 inch baking dish and place it in the oven until melted, avoiding browning.
  • In a mixing bowl, combine self-rising flour, brown sugar, white sugar, whole milk, and vanilla extract. Whisk until smooth.
  • Pour the batter into the baking dish over the melted butter. Do not stir!
  • Carefully layer one can of drained peaches and one can of peaches with juice over the batter.
  • Sprinkle ground cinnamon generously over the top.

Baking

  • Bake for 45 to 50 minutes until the top is golden brown and the dough is cooked through.
  • Allow to cool for 10 to 15 minutes before serving.
  • Serve warm with vanilla ice cream on top.

Notes

Allow the cobbler to cool slightly before serving to enhance flavors. For alternatives, consider substituting butter with applesauce or experimenting with different fruits.
