  • 1.5 lbs Yukon Gold potatoes Creamy and buttery, crispy on the outside.
  • 1.5 lbs steak (New York, ribeye, or sirloin) Choose a juicy cut that's rich and flavorful.
  • 4 large eggs Adds velvety richness to the dish.
  • 1 medium onion, cut into chunks Aromatic and slightly sweet.
  • 0.5 cup red bell pepper, diced Sweet and vibrant for color.
  • 0.5 cup green bell pepper, diced Slightly bitter but refreshing.
  • 2 cloves garlic, minced Infuses delightful flavor.
  • 2 tsp salt, divided Enhances all flavors.
  • 1.5 tsp black pepper, divided Provides a subtle kick.
  • 0.25 cup vegetable oil, divided Essential for frying and searing.
  • 1 tsp paprika Adds warmth and depth.
  • 0.5 tsp red pepper flakes For a touch of heat.

Instructions
 

Preparation

  • Bring a pot of water to a boil. Add the diced Yukon Gold potatoes and cook for about 5 minutes. Drain well.
  • Let the steaks come to room temperature for about 15 minutes. Season both sides with 1 teaspoon of salt and ½ teaspoon of black pepper.

Cooking

  • Heat a large cast iron skillet over medium-high heat and add 2 tablespoons of vegetable oil. Sear the steaks for 4-5 minutes on each side.
  • Remove the steaks and let them rest on a cutting board for 10 minutes before cutting into bite-sized cubes.
  • In the same skillet, add the remaining oil, reduce the heat to medium, and add the parboiled potatoes, onion, both bell peppers, garlic, paprika, red pepper flakes, and remaining salt and pepper.
  • Cook the mixture for about 15 minutes, stirring occasionally, until the potatoes are golden brown and crispy.
  • Reintroduce the cubed steak into the skillet and create wells for the eggs. Crack an egg into each well, cover, and cook for 3-4 minutes.
  • Taste and adjust seasoning as necessary. Garnish and serve straight from the skillet.

Notes

Consider soaking potatoes before cooking for better crispiness. Use a cast iron skillet for perfect heat distribution. Customize egg doneness to preference.
